Shake Up Your Egg Routine With This Healthy Avocado And Egg Recipe!

Freshen up your palate with some healthy dining with this delish recipe.

If you are anything like me then you are most definitely trying to get over your holiday binge eating frenzy. Getting back to eating healthy can be challenging especially since we are also back to work. Here's a delicious and healthy recipe that you can enjoy for breakfast, lunch or dinner. It packs the goodness of healthy fats, omega-3 and, best of all, it literally takes under 10 minutes to prepare.
I call this my "AvoEgg Fix”. . . Let’s get started!

1 ripe avocado, pit removed and mashed
1/2 a lime, juiced
1 tomato, sliced
1 egg, poached
Salt and pepper to taste
1 slice of bread, toasted (I use spelt flour bread, but you can use any type of bread.)

1. Mash the avocado with a fork. Add the juice of half a lime and salt and pepper to taste.
2. Toast your bread to the desired doneness and smear the avocado on the toast.
3. Add a few slices of tomato.

How To Poach The Egg:
1. Bring 4 cups of water to a simmering boil. Add 2 tablespoons of white vinegar and a little salt.
2. Crack the egg into another bowl.
3. With a whisk, start swirling the water to create a gentle whirlpool. 
4. Carefully add your egg to the water and you will notice that the egg white will swirl with the water and wrap around the yolk. After 1 minute turn off your stove and leave the egg in the water for an additional 3 minutes. (Do not touch the egg).
5. Carefully scoop out the egg.

Place the poached egg gently on top of the tomato and sprinkle with salt and pepper to taste and a little red chili powder for an extra kick of flavour.  Enjoy!
